Weekly Meal Plan for 1/31-2/6

This next week is really crazy busy.  We have something going on every evening, so I tried to pick easier meals that I can prep the night before or simply pull out of the freezer (there are a few meals which I froze a couple weeks ago for such weeks as this coming one).  It’ll feel splendid to just go out to eat somewhere on Saturday night and relax as a family.  It’s always nice to have a break from cooking and baking!

Sunday
Breakfast: Baked Oatmeal
Lunch: Grilled Cheese Sandwiches on Homemade Wheat and Campbell’s Healthy Request Soup
Dinner: Spaghetti, Whole Grain Pasta, Italian Cheese Bread and Fresh Garden Salad
Snack: Rice Crackers

Monday
Breakfast: Cereal and Applesauce
Lunch: Baked Potatoes with Sour Cream and Cheese, Cooked Carrots
Dinner: Leftovers (Veronique eats out with a friend)
Snack: Pumpkin Bread

Tuesday
Breakfast: Sunshine Toast and Bananas
Lunch: Baked Macaroni and Cheese, Steamed Broccoli
Dinner: Deli Sandwiches on Homemade Wheat, Wheat Thins and Fruit
Snack: Yogurt

Wednesday
Breakfast: Pancakes (recipe from Joy of Cooking)
Lunch: Peanut Butter and Jelly Sandwiches on Homemade Wheat, Corn
Dinner w/ Community Group: Pineapple Casserole (recipe from Kimberly)
Snack: Goldfish

Thursday
Breakfast: Cereal and Yogurt
Lunch: Homemade Cheese and Spinach Pizza and Mandarin Oranges
Dinner: Shepherd’s Pie, Cornmeal Crescent Rolls and Baked Apples
Snack: Granola Bars/Cheese and Crackers

Friday
Breakfast: Pumpkin Bread
Lunch: Chicken Salad Sandwiches on Homemade Wheat, Pita Chips and Homemade Jell-O
Dinner: @ the MESSICKS (we are bringing a dessert…I just don’t know what yet!)
Snack: Fresh fruit

Saturday
Breakfast: Breakfast Casserole, Brown Sugar Biscuit Twists and Fruit
Lunch: Bean and Cheese Quesadillas and Applesauce
Dinner: EATING OUT (with our “Family Dining” budget of $30…we usually eat out as a family 2-3x/mo.)
Snack: Friends’ Birthday Party
